Welcome to Coconut Heaven!

Raw Lemon Cheesecake Mmmmm

If you missed seeing me present at the Melbourne MindBodySpirit Festival, you missed this delicious Raw Lemon Cheesecake recipe!  Thanks so much to those that came along, it was so much fun getting our Coco-Power on!

Raw Lemon Cheescake recipe 


(Coconut Power Ball Recipe)

1 cup desiccated coconut

1 cup macadamias

1 cup walnuts

6 Dates

2 TB coconut oil



3 cups pre-soaked macadamias

1 cup coconut oil

3 TB coconut nectar*

Zest and juice 2 lemons

1 tsp raw vanilla

½ tsp sea salt



Soak macadamias overnight in filtered water with a pinch of sea salt. Drain, dry and ready to use.

Make base by combining all ingredients in a food processor until coarsely ground.

Press mixture firmly into a small cheesecake pan (pre-grease with coconut oil).

For topping, combine all ingredients in food processor until smooth.

Pour topping over base and smooth with spatula.

Refrigerate for min 30 mins.

Slice and carefully remove from pan and serve.  Too yummy! xx


* can substitute raw honey
