Beets are well known for their health promoting goodness and, although they are at the top of the list as far as sugar in veggies is concerned, they have so many benefits including:

When you add beetroot to coconut, the benefits are multiplied by a gazillion!...

Heres the recipe:

special note: rub coconut oil on your hands before peeling your beets to prevent ending up with purple fingers!


1 large fresh beetroot

1 cup desiccated coconut

1.5 tablespoons coconut vinegar

1 teaspoon himalayan salt

1 teaspoon cumin

1 clove garlic

pepper to taste.

All you need to do is peel and roughly chop the beet and chuck everything in the food processor until combined.


Serve with your favourite grain free crackers, cut up veggie sticks or add as a relish. Yum!
