Coconut butter is delicious, have you tried it?
Not to be confused with coconut oil, this is a delicious FOOD, not a lotion or body butter.
WHAT IS IT?
Coconut butter is finely ground dried coconut. The coconut is ground until the oils split and separate from the flesh and then mix into a creamy coconutty paste. In comparison, coconut cream and milk are made from the fresh wet coconut flesh, whilst the butter is made from dried coconut flesh. Coconut Oil differs from coconut butter as it is the oil extracted from the flesh. Coconut butter contains coconut oil naturally. Coconut butter contains ALL the fiber of the coconut. Pure, dried coconut contains more fiber per gram than even oat bran!
The nutritional benefits of coconut butter are similar to those of coconut oil, with additional fibre... so:
- speeds up metabolism
- balances hormones
- increases energy
- improves memory and brain function
- assists digestion
- nourishes hair, skin and nais
- its also antiviral, antibacterial, antifungal
- these are just a few!
HOW DO YOU MAKE IT?
Only one ingredient!
Organic, unsweetened, desiccated coconut. (buy here)
(you can use shredded or flaked coconut but it always works best with desiccated)
I'm a thermomix lover so i use my themi, but any high speed blender will do
Simply fill the bowl to the max line with desiccated coconut (roughly 800g in a TM5)
Use the highest setting on a normal processor, time will vary depending on the speed, it can take up to 10mins, just be patient! (Speed 5, 3.5 mins in a thermi) Also, depending on the day, u may need to stir here or there if it stops spinning, but sometimes luck has it and it's hands free.
After a while you will hear the oils split as the mixture will change form to smoother, then again when it becomes soft smooth and runny - thats when you know it's ready.
And voila, coconut butter!!!
Pop it in a lovely jar and it's ready for eating!
HOW DO YOU USE IT?
This rich and scrumptious butter was created for the foodies of the world.. and for those that really care about their health. Hypoallergenic and suitable for those following a vegan, vegetarian, paleo, gluten-free, sugar-free, dairy-free and/or low carb diet.
Full of all the good fats of coconut oil but with all the fibre of the flesh as well. Great to use as a spread and in cakes and biscuits. Because of its low moisture content, it can be mixed right in the batter or dough of breads and pastries. Ideal for adding a creaminess to raw desserts, bliss balls, fudge or in your morning coffee as a non-dairy creamer. You can mix 1 or 2 teaspoons of Coconut Butter with water to make a creamy coconut drink, and a little more to easily make coconut milk! It can also enhance soups, be blended with smoothies, or made into ice cream.... or eat it straight from the jar for a burst of energy and nutrition. Yummmm.
HOW DO YOU STORE IT?
Coconut butter, like coconut oil (because it contains the oil) will solidify below 25c and some separation of oil may occur. So it gets hard in winter and the oil will rise to the top and you will see a white layer of oil. If you need it smooth, warm gently in a bowl over warm water to soften if needed. Do not microwave or heat in a saucepan as it will burn really easily and ruin.
HOW LONG WILL IT LAST?
Coconut is an amazing stable food, so it will usually last at least 12 months if stored in an airtight container. No need to refridgerate.
