Smooth, caramel-ish and toffee-like, it is to die for! It is a natural sweetener that can replace white or brown sugar, honey, maple, molasses in any recipe. It can be used as you would any other sugar, in your tea or coffee and in any biscuit, cake, sweet or treat.
Coconut sugar is made from beautiful coconut nectar. Straight from the flower of the coconut tree, when cut, the blossoms release a thick, sweet sap that is collected. The cut flower can stay open and oozing for almost 20 years! The fresh sap has a silky, pearlescent appearance, and once collected it is gently heated at low temperatures, reducing the nectar by one quarter, producing a heady sweet smell and beautiful caramel-colored thick liquid. This nectar is dehydrated to produce coconut sugar!
Our coconut sugar comes from small certified organic farms in Sri Lanka.
Coconut sugar naturally contains 17 amino acids (the building blocks of any protein), as well as vit C, calcium, phosphorous, potassium, copper, magnesium, zinc, manganese and iron. It has a Glycaemic Index of 35 which is very low and suitable for diabetics.
